Herbal Pom Açaí No-Groni
A fabulous post-leaf-peeping mocktail that’s well worth the advanced mixology. Waterloo Pomegranate Açaí and a mix of botanicals and herbs bring to life the spirit of a negroni, without the spirits.

Ingredients

3 oz Waterloo Pomegranate Açaí Sparkling Water
2 oz Cranberry Botanical Elixir* (worth the extra effort!)
1 oz Herbed Earl Grey Tonic** (same here-you got this!)
1/8 tsp Aromatic Bitters (~7 dashes)
Orange Peel
Dried Orange Slice
Thyme Sprig
Bay Leaf

 

*Cranberry Botanical Elixir:
4 oz Unsweetened Cranberry Juice
2 oz Water
2 tbsp Sugar
¼ tsp Dried Thyme
2 Bay Leaves
¼ tsp Peppercorns
3 Lightly Crushed Cardamom Pods
2 Large Orange Peels

 

**Herbed Earl Grey Tonic:
4 oz Water
2 Earl Grey Tea Bags
2 tbsp Sugar
¼ tsp Dried Tarragon
¼ tsp Fennel Seeds
2 Large Lemon Peels
½ tsp Lemon Juice

Directions

For Herbal Pom Açaí No-Groni: 

At least 1 day in advance, make cranberry botanical elixir and herbed earl grey tonic. On a small plate add orange zest and mix with granulated sweetener or sugar. Dip a short rocks glass in a shallow dish of water or juice to wet the rim, then to the plate of zest-sweetener. In a mixing glass add Waterloo Pomegranate Açaí, cranberry botanical elixir, herbed earl grey tonic, aromatic bitters with an orange peel and swirl to combine. Place a large ice cube in the rimmed glass and pour in mixture. Garnish with dried orange slice, sprig of thyme and bay leaf.

 

For Cranberry Botanical Elixir:

In a small pot, add all ingredients and stir to dissolve sugar. Bring to a boil, reduce heat, and simmer for 5 minutes. Cool slightly. Strain into a jar and store in the fridge for 1-2 nights. Strain and store in the fridge for up to 1 week.

 

For Herbed Earl Grey Tonic:

Boil water. Remove from heat and add tea bags. Steep for 10 minutes and strain/remove tea bags. Add tea, sugar, herbs, and lemon zest to a small pot. Stir to dissolve sugar. Bring to a boil and simmer for 5 minutes. Remove from heat and cool slightly, then strain. Add lemon juice. Store in a jar in refrigerator for up to 1 week.
